Land:    Predominantly sandy, with good superficial permeability, almost exclusively of volcanic genesis

Picking:    Last decade of September, first decade of October, hand harvest
Vinification:   Controlled temperature fermentation for 15 days.
Aging:    Aging starts after alchoolic fermentation, with a stop of 12 month on fine lees, and batonnage, pulling up the good lees, with the pourpose of best structuring the final product. The Santa Patena goes in glass bottle at least for 3 months.
